The second recipe from The Baby Led Weaning Cookbook is one of my absolute favourites.
These really easy to make veg loaded bites are perfect as snacks or as a side dish. They never seem to last very long here at LP HQ, but apparently other people freeze them for later – who knew?
Baby Broccoli and Spinach Bites
Prep Time: 15 mins
Cook Time: 20 mins
Yields: 24
Ingredients
• 1 cup (150g) cooked broccoli, cooled and roughly chopped
• 1 cup (30g) fresh spinach, roughly chopped
• ½ carrot, peeled and finely diced
• 2 cups (250g) grated mozzarella cheese
• 3 medium eggs, whisked
• 1 cup (125g) plain flour
• 1 teaspoon dried oregano
Method
1. Preheat the oven to 190°C and place a 24-hole silicone mini-muffin tray onto a baking tray
2. In a large bowl, mix together all of the ingredients to form a wet dough
3. Divide the mixture evenly between the muffin tray cases – fill each hole to the top and use the back of a spoon to pack the mixture in tightly
4. Bake your bites in the oven for 15-20 minutes, or until golden brown
5. Serve once cooled.
