BBQ’D Garlic Cheesy Ciabatta

It feels like summer is finally here and the first thing I did was complain that it was too hot – typical! 

During the warmer months I try to avoid cooking in the kitchen as much as possible. We’re always outside playing anyway so it makes complete sense to just turn on the BBQ and throw some bits on it. Yesterday’s dinner was chicken wings and salad. I always like to have some carbs/starch with our meals to balance them out. But, it was way too hot for pasta, rice or potatoes. I found some pre-cooked ciabattas in the cupboard and thought “oh, garlic bread. Mmmm BBQ’d cheesy garlic ciabatta.”

Then I thought “I wonder if I could BBQ this?” So I tried it out and it was delicious. BBQ’d cheesy garlic ciabatta was born and the kid’s have asked for it again today!

INGREDIENTS

2-4 Pre-Cooked Ciabattas

2-3 Tbsps of butter (room temp or softened in the microwave)

2-3 large handfuls of grated cheese

2 cloves of garlic minced

Pinch of salt and pepper

METHOD

Mix the garlic, butter, salt and pepper in a bowl.

Slice the ciabattas lengthwise to open in up, but do not cut it all the way through. You want to be able to open it like a butterfly.

Spread the butter mix on the inside of the ciabatta.

Fill with the grated cheese.

Pop on to the BBQ for 5-8mins or until cheese has melted and ciabatta goes a little crispy (turn over once during cooking). 

Be careful not to put over direct flame/heat. If using a gas BBQ turn off the burner on the side you are putting the BBQ’d cheesy garlic ciabatta on. If using coal, make sure you wait for the flames to die down before placing on the BBQ.
