Brussel Sprouts with Pancetta

You can’t have Christmas dinner without brussel sprouts. Ok, you can, but Brussel Sprouts with Pancetta, really should be on your menu.

Growing up I was firmly in the ‘hate sprouts camp’, until one day I was served Brussel Sprouts with Pancetta. It changed my life, an exaggeration, but they are so good. 

These take about 5mins to make and can be prepared ahead of time and reheated when needed.

When it comes to Christmas, I try to prepare as much as I can ahead of time, that way I can enjoy the day and not be stuck in the kitchen. My pork and sage stuffing balls can be prepped the day before ready to be cooked when needed – recipe coming soon

INGREDIENTS

400g of sprouts, washed

pack of smoked pancetta – ready to cook

METHOD

Boil or steam the sprouts for 3mins. If reheating later reduce to 2mins.

Pan fry the pancetta until crisp and golden brown. 

Drain the sprouts and add to the pan with the pancetta. Toss well.

Eat. Enjoy
