Oat bars are such a great snack to have on hand. Perfect for lunchboxes too. You can make oat bars with pretty much anything, but these Carrot Cake versions are firm favourites in our house.
This recipe makes 10-15 little squares. It all depends on how much you flatten them before baking.
INGREDIENTS
1 medium carrot, washed, skin left on and grated. Excess water squeezed out.
2 cups of porridge oats
60ml maple syrup – can use honey. Make sure you do not give honey to under 1s.
1/4 cup raisins
150ml water
1tsp each of ground ginger, cinnamon and cacao powder
METHOD
Preheat the oven to 180c (fan).
Add all the ingredients except the water to a large bowl and mix well. Gradually add the water mixing as you go.
Line a small baking tin with parchment paper. Add the oat mix and flatten with the back of a spoon. You must ensure that it is packed down enough so when it is cooked it sticks together.
Bake for 20-30mins or until golden brown and stiff.
Allow to cool, cut into squares (or if you’re like me, break it up with your hands) serve.
