Courgette and Carrot Fritters

These tasty hidden veg fritters are a perfect side dish or snack. Logan has always turned his nose up at courgette in its pure form, but hidden in a puree or these tasty treats, he devours them. Eat them immediately or freeze for later.
Makes 10.

INGREDIENTS
1 Courgette
2 Carrots
65g of plain flour
1 medium Egg
1tsp Garlic Granules
1/2tsp Cayenne Pepper
Pinch of salt and pepper
1tbsp Rapeseed Oil (Olive is fine)

METHOD
Grate the courgette and unpeeled carrots into a cloth or kitchen roll. Squeeze out excess water.
Whisk the egg.
Add all ingredients into a bowl and mix well.
Heat the Oil in a frying pan (medium heat).
Add a spoonful of the mixture to the pan and flatten with back of spoon.
Fry for 2-3mins on each side or until golden brown.
