One Pot Chicken and Halloumi Bake

One pot Chicken and Halloumi bake.
This really simple one pot meal takes about 35/40mins and uses up any veg you have in the fridge.

I am a huge fan of halloumi, I could eat it every day. It is definitely a moderation food. It’s high in saturated fat and salt. Please, if serving to little tums, dramatically limit the amount you serve them. We found this article in BBC Good Food quite interesting. It probably should have put me off of Halloumi, but it would take a lot to do that. It’s a bit of an addiction.

Perfect for the whole family, serves 4-6. 

INGREDIENTS
Tin of chopped tomatoes (I use tinned tomatoes a lot. I buy them in bulk. You can always whip a quick meal using them.)
Olive Oil
Pinch of black pepper
Pinch of salt
Fresh basil – handful of leaves left whole
1tbsp  Dried Oregano
4 x chicken thighs – skin removed (thighs are higher in iron than breasts, so better for little ones)
Red onion – peeled and cut into 6
3 cloves of garlic – peeled and halved
Veg of your choice – cut into large chunks. I’ve used aubergine and courgette.
3 – 4 handfuls of kale/spinach
Halloumi cheese – sliced inch thick
Serve with a good quality bread for mopping up the extra sauce. 

METHOD
Pre-heat the oven to 180c (fan)
Add chicken, onion, garlic and oregano to oven dish
Drizzle with olive oil and give it a quick mix, making sure the chicken is covered in oil and oregano. 
Cook for 15mins
Add all other ingredients except halloumi to dish
Add water (use the tomato tin), stir until all ingredients are covered in sauce
Add halloumi
Cook for a further 15-20mins until chicken is cooked through and sauce is bubbling. Stir half way through to prevent spinach and kale from burning.
