Salmon & Potato Balls

These really simple salmon balls are a perfect snack or meal. If you remove the grated cheese, these can be dairy free.

It’s recommended that you serve oily fish 2-3 times per week. Omega 3 is a vital nutrient for little ones growth and development. It can be hard to come up with exciting ways to serve fish, this dish is a good way to mix it up.

Suitable for the whole family. Perfect for BLW, as they’re easy to pick up. 

Make them ahead of time and freeze for later, for a quick mid week meal.
Makes 12.

INGREDIENTS

2 large potatoes. Peeled, boiled until cooked and cooled.
1 packet of smoked salmon flakes. I have tasted them all and I prefer the oak smoked from Aldi – they are also freezer safe. 
Handful of chives, roughly chopped. 
Juice of 1/2 lemon.
Handful of grated cheese (optional).
1 medium egg.
Large handful of frozen peas.
Pinch of salt and pepper.

METHOD
Add all ingredients to a bowl. Mix together.
Roll into balls until all of mix is gone.
Place onto oven proof dish.
Cover and put in the fridge for an hour to set.

If freezing for later, instead of popping in the fridge to set, place them in a food safe air tight container and freeze.

If making from frozen, make sure they are completely defrosted before cooking.

Pre heat oven to 180c fan. 
Cook for 20-25mins or until golden brown.

Eat. Enjoy.

Serve with veggies or salad of your choice.
