Sausage & Bean Casserole

This one pot meal is the ultimate comfort food. It combines sausages (who doesn’t love sausages) and nutrient dense beans and veg.

Perfect for the whole family. This recipe makes enough for dinner, lunch the next day and left overs to freeze for later (get your Logan’s Plate pots out).

INGREDIENTS

6 good quality sausages

3 medium/largeish potatoes washed, skins left on and cubed

10 leaves of cabbage roughly chopped

1 tin of kidney beans

1 tin of cannelloni beans 

1 onion roughly diced

2 cloves garlic roughly diced

 

2 tins of chopped tomatoes (keep 1 empty tin)

1 tbsp of tomato puree

1.5tbsp of smoked paprika

Pinch of salt and pepper

1.5tbsp of rapeseed oil (olive is fine)

METHOD

Using a large pot with lid, fry sausages with half the oil on a low heat until brown on each side. Remove from pan.

Add rest of oil, fry onions for 2-3mins then add garlic and fry for 1min.

Add sausages, potatoes, paprika, salt, pepper and stir. Add 2 tins of water, chopped tomatoes, tomato puree. Stir, bring to the boil, cover, reduce heat and simmer for 30mins.

Add beans and cabbage and cook for 10-15mins.

Break up sausages into bite size pieces. 

Serve with crusty bread.
