Wheat-Free Apricot and Date Cookies

Words cannot describe how excited I am. I’ve been following Natalie from the Baby Led Weaning Cookbook for ages. I love her recipes and so does Logan and Kaia. If you don’t already, follow her on Instagram, Facebook or download one of her many apps from the app stores.

I reached out to her and asked if she would share some of her recipes with me and she said yes!!!!! Over the next 4 weeks a new recipe from Natalie will be put on the blog. Let me tell you, they are all amazing and I can’t wait to make them myself. 

First up we have Wheat-Free Apricot and Date Cookies

Prep: 10 mins 

Cook: 15 mins 

Yields: 12

Ingredients:

    • 75g rice flour

    • 50g oats

    • 75g unsalted butter, melted

    • 2 medium eggs, whisked

    • ½ teaspoon bicarbonate of soda

    • 2 apples – peeled, cored and diced

    • 250g dried apricots, diced

    • 50g Medjool dates, pitted and finely diced

 

Method:

    1. Preheat the oven to 180°C and line a baking tray with baking paper 

    2. In a large bowl, mix together the rice flour, oats, melted butter, eggs and bicarbonate of soda – mix until just combined

    3. Gently fold in the diced apple, apricots and dates 

    4. Spoon heaped tablespoon amounts onto the lined baked tray, spacing at least 2cm apart

    5. Bake your cookies for 15 minutes, or until golden brown

    6. Serve once cooled.
