These broccoli muffins or broccoli cakes as Logan calls them, are super simple to make and delicious. Have them as snacks or as a side dish.
If you struggle to get your little one to eat certain veggies, you can make these with different combinations of flavours.
There’s a lot of talk around hidden veggies. Some say it’s the best way to get a good dose of your little one’s 5 a day, others say it can stop them from liking the taste of individual vegetables. As long as you serve a small amount of the offending vegetable on it’s own regularly, it’s fine hide it in a sauce, pie or muffin now and again.
Recipe makes 12.
INGREDIENTS
3/4head of broccoli broken into florets
2 large handfuls of grated cheese
1 egg
140g of self raising flour
100ml of milk
1.5tsp of italian herb seasoning
1tbsp olive oil
METHOD
Preheat oven to 190c (fan)
Boil or steam the broccoli until soft enough to mash.
Drain, mash and leave to cool.
Line a muffin tin with muffin cases.
In a large bowl mix the ingredients together – careful not to over mix.
Fold in the broccoli.
Spoon the mixture into the muffin tray.
Bake for 20-25mins or until golden brown and cooked through.
Eat. Enjoy.
