French Toast Roll Ups

Breakfasts can become mundane. Not sure about you, but I seem to reach for the same few things every time. There’s only so many variations of porridge you can make. These French toast roll ups, are a great quick alternative.

They take about 7mins to prepare and make, so not too much time for a quick midweek brekkie.

Recipe

INGREDIENTS

Slices of bread – 1 slice = 1 roll up. So use as many as you need.

1 egg

Splash of milk

Jam of choice – I use Strawberry

Cinnamon

Butter

METHOD

Gently heat a knob of butter in a frying pan.

Remove crusts from the bread. TIP: keep the crusts and freeze them for breadcrumbs.

Using a rolling pin, roll out the bread until thin.

In a largeish bowl, whisk the egg, milk and cinnamon.

Spread some jam on one side of the bread. Roll the bread into tubes (jam in the middle).

Dip and spin the rolls in the egg mix. Making sure it is completely covered.

Gently fry each roll. Turning to ensure it is golden brown on each side. About 5mins. 

Serve with fruit of choice.
