Sausage & Veg Tray Bake

You can’t go wrong with this sausage & veg tray bake. I’m a huge fan of one pot dinners for various reasons, the main one being less washing up. But, by cooking everything together you get a mix of all flavours that create subtle changes to each ingredient.

As the darker evenings draw in, out comes the slow cooker and my large roasting dishes. Sometimes I prefer a tray bake for a one pot meal to using the slow cooker. The slow cooker doesn’t give you that crispy skin that makes sausages and chicken the little bit more tasty.

As with most of my recipes, you can get creative and use any ingredients you have in the fridge, but for this particular sausage & veg tray bake, I used veg that really bring out the best in each other. This is a perfect family meal, BLW safe and suitable from 6 months.

INGREDIENTS

1 pack of good quality sausages – I’m obsessed with the Heck range at the moment

1 pack of tenderstem broccoli – washed and left whole

1 red pepper – washed, de-seeded and thinly sliced

10 cherry tomatoes – washed and sliced lengthwise

2-3 carrots – washed, unpeeled and julienne

2-3 parsnips – washed, unpeeled and julienne

10 charlotte potatoes – washed, unpeeled and cut into halves. Can use any potato really, just cut them up into small chunks

1 large red onion – peeled and cut into chunks

4 cloves of garlic – peeled and roughly chopped

1.5tbps – mixed herbs

1tbsp – garlic granules

Large pinch of salt & pepper

4tsps oil – I use rapeseed for the added health benefits, but olive is fine

METHOD

Preheat the oven to 180c (fan)

In a large roasting tin or dish (needs to be flat so all ingredients can be spread out) add all ingredients except the sausages.

Mix well, ensuring everything is nicely coated in the herbs.

Make spaces for the sausages so you can place them touching the bottom of the roasting tin/dish.

Cook for 45mins-1hr or until sausages are cooked and all veg is nicely browned. Make sure to turn the sausages a couple of times to get them evenly browned.
