Super Simple Baked Fish

I love baked fish. It’s a super simple meal, that can be flavoured in so many ways. All you need is some tin foil, a baking tray and ingredients of your choice. Throw it in the oven and make side dishes of your choice – potatoes, rice, noodles, pasta, whatever you like. I usually make it on Meat free Monday.

Meal prepping can be tough, it’s hard to come up with new things to make each week. I try to follow Meat free Monday, Wholesome Wednesday, Tupperware Thursday (leftovers or freezer stash) and Fakeaway Friday. This helps me shape the weekly menu. Bonus tip for you!

Baked Fish is always a winner in my house. For this recipe I used frozen cod and some frozen veggies. My freezer always has a few packs of different cook from frozen fish. They have saved me many a time. 

Recipe makes enough for 4 people. 2 adults and 2 children.

INGREDIENTS

4 pieces of frozen cod

Thai Green Curry Paste to taste

5-10tbsps of coconut milk

2 large handfuls of frozen corn and peas

2 large handfuls of mange tout

5 stalks of baby corn broken into pieces

METHOD

Pre heat the oven to 180c (fan) or as per fish packet instructions.

Place tin foil into a baking tray. Should be large enough to make a parcel around fish and veg.

Pop a piece of fish into the foil. 

Top with Thai Curry Paste. I make separate parcels for each person, that way I can manage the spice of the curry paste. For Logan and Kaia I use 1/2tsp. For myself and Mike I tend to use 1-2tbsps.

Add 2-3tbsps of coconut milk.

Top with veggies.

Form tin foil into a parcel.

Cook for 25mins or as per fish packet instructions.

Serve with rice or noodles.
